The Chaat originated in Northern India in the late 17th century during the reign of Mughal Emperor Shah Jahan. The recipe for chaat (as kshriravata) is mentioned in Manasollasa, a 12th- century Sanskrit encyclopedia. According to food historians, descriptions of chaat also appear in literature from 500 B.C.

Butter chicken originated in Delhi, the capital territory of India, in 1947. The most loved Indian dish is an attribute to Kundal Lal Jaggi, a Hindu from Punjab state, who fled from newly formed Pakistan after 1947 partition of India and opened a restaurant in Delhi. He then came up with the genius idea of creating a basic gravy with tomatoes, butter, cream, and some spices to immerse the Tandoori Chicken pieces in, helping them regain moisture and becoming palatable again. And thus, was born the BUTTER CHICKEN.

Korma is a very old recipe since the 15th century. This recipe belongs to Mughal cuisine. When Mughals ruled in India their cuisine spread and mixed with Indian cuisine. Mughals came to India from Afghanistan, so their food culture also belongs to Afghanistan. Because of this, you can Afghan food cuisine influence in Mughal cuisines.

This dish was named after the famous historical chef Beliram of Maharaja Ranjoy Singh's kitchen who was the best cook of that time. It was said that Maharaja was so happy with his dish that he himself named the dish "Gosht Beliram" as that his name will be present forever though his dish. Koftas are a part of Mughali cuisine of the Indian subcontinent, borrowed largely from Persian cuisine. In the Indian cuisine, deep-fried koftas are cooked in cashew-onion gravy with cream and plenty of spices that make the dish rich and sumptuous.

Atta (Flatbreads)

Some say that Chapati came from the Egyptian Indus Valley civilisation 5000 years ago. Others claim it was founded in East Africa and brought over to India. However, the most common evidence is that it was founded in Southern India. Chapati is mentioned in old Sanskrit text from over 6000 years ago. It is also said it was favourite of King Akbar way back in 1556.
